While it’s not for everyone, a lot of grillers are fans of spicy food. And why wouldn’t they be? Spicy food makes you enjoy the food better and makes you want to eat more! So whether you like adding chilis, peppers or other spices to your meals, you’ll surely enjoy these delicious spicy grilling recipes!

Grilled Spicy Chicken Adobo

What you need:

  • 1 kg. boneless, skinless chicken thighs
  • 1 can (7oz) chipotle peppers in Adobo sauce
  • 3 cloves garlic, minced
  • 3 tbsp. apple cider vinegar
  • 1/2 tsp. salt
  • 1/2 tsp. cayenne pepper

To create the marinade, place chipotle peppers, adobo sauce, garlic, apple cider vinegar, salt and cayenne pepper in a blender or food processor then pulse until all ingredients are liquefied. Place chicken thighs in a 1 gallon Ziploc or food storage bag and pour marinade over chicken. Seal the bag, shake and refrigerate for 2 hours to overnight to marinate. When ready, discard marinade and cook chicken on a pre-heated grill over medium high heat until cooked through, about 6-8 mins per side.

Note: Use 3 chipotle peppers and 2tbsp adobo sauce for mild spice, 6 chipotle peppers and 3tbsp adobo sauce for medium spice and use entire can if you prefer hot and spicy.

Sweet and Spicy BBQ Pork Tenders

What you need:

  • 2 pcs. pork tenderloin (about 12oz each)
  • 12 cloves garlic, crushed and roughly chopped
  • 1/2 cup soy sauce
  • 1/4 cup olive oil
  • 1/4 cup cilantro or parsley, finely chopped
  • 6 tbsp. brown sugar
  • 2 tsp mustard. dried and ground
  • 2 tsp. ground ginger
  • 1 tsp. paprika

Place the garlic, soy sauce, olive oil, cilantro, brown sugar, mustard, ginger and paprika in a large Ziploc bag. Seal and shake the bag to combine ingredients well. Place the pork tenderloins in the bag and allow to marinade in the refrigerator for at least 4 hours.

When ready, allow the bag to sit for 20-30 mins at room temperature. Discard the marinade when ready to grill. Cook pork tenderloins in a pre-heated grill over medium-high heat until cooked through, depending on your preferred doneness.

Once cooked, cover and let rest for 5-10 minutes before slicing. Best enjoyed with a side of rice or fresh/grilled vegetables.
