Without fail, I eat breakfast for dinner on a snow day—specifically pancakes, waffles, or French toast, stacked high and drizzled with maple syrup, a dusting of powdered sugar, and a pat (or two) of butter. It’s classic comfort food (and a reason to slip on my PJs a little early).
But beyond simple breakfast recipes like scrambled eggs with hash browns or poached eggs over English muffins, we have so many breakfast-inspired recipes for dinner like Shakshuka Focaccia (individual pieces of focaccia topped with tomato sauce and baked eggs); a Pizza Omelet, which folds tomato and mozzarella cheese into the center of a creamy egg dish for one; or Spaghetti Carbonara Frittata, which quite literally folds spaghetti and pancetta into the mix.
When breakfast is served for dinner, all rules go out the window (go ahead and play with your food!).
1. Prosciutto and Goat Cheese Strata
Somewhere in between a frittata and a bread pudding is this savory dish made with prosciutto or bacon, goat cheese, and onions.
2. Shakshuka Focaccia
Shakshuka is traditionally an egg and tomato skillet that’s served family-style; these individual focaccia squares have the same components—shakshuka sauce and baked eggs.
3. Cheesy Bread Pudding Waffles
Savory waffles? Yes, please! Torn pieces of bread are soaked in a rich custard and then mixed with cooked sausage crumbles, green onions, and lots of sharp cheddar cheese.
4. Rye Puff Pancake With Greens & Eggs
Think of this recipe as a savorier Dutch baby made with nutty rye flour and tangy crème fraîche. Our go-to toppings for a breakfast for dinner-inspired pancake are eggs and sautéed greens, but you can switch it up with breakfast meats and cheese.
5. Chickpea, Spinach, and Chorizo Frittata
We love a frittata because you can put virtually anything in it—this time, we’re adding roasted red peppers, chickpeas, chorizo, spinach, and paprika for an egg bake that’s packed with flavor and texture.
6. Toast Frittata
Not only does this family-friendly breakfast-inspired dinner recipe come together in under one hour (a weeknight win!), but it costs less than $10, thanks to former Food52er Rebecca Firkser’s “nickel and dine-ing” approach to cooking.
7. Pizza Omelet
We combined a breakfast favorite—a diner-style omelet—with our favorite Friday night meal for a cheesy, tomato-y all-in-one meal.
8. Leftover Mashed Potato Pancakes With Cabbage, Scallion & Ginger
Don’t you dare put leftover mashed potatoes in the trash! “Stuffed with shredded cabbage and redolent with scallions, ginger, and garlic, they cook up with a french-fry-like shatter on the outside, while retaining all the best qualities of mashed potatoes inside,” says Shilpa Uskokovic.
9. Cream Cheese Omelet With Everything Seasoning
The flavor of an everything bagel in a silky omelet is the perfect breakfast combination. “I bow down to this seedy ingredient for its all-in-one crunch and savoriness,” writes recipe developer Emma Laperruque.
10. Josh Ozersky’s 3-Minute Hash Browns
The perfect side dish no matter what you’re serving for dinner.
11. Cheesy Sausage & Mushroom Strata
One of our favorite dinners is a leftovers dinner that clears the fridge out. This strata makes use of leftover sausage meat, stale bread, and whatever veggies you have on hand.
12. Caramelized Onion Dutch Baby With Melty Gruyère
Don’t be turned off by the somewhat lengthy cook time for this meal; you can actually make the caramelized onions in advance and freeze them (bookmark this for a weekend cooking project!).
13. Spaghetti Carbonara Frittata
The classic Roman pasta dish is reinvented in the form of a frittata (complete with spaghetti and prosciutto).
14. Butternut Squash Brown Rice Porridge
Everything about this breakfast for dinner recipe says “fall.” Start a simple brown rice porridge, add pureed butternut squash, ginger, and garlic, and simmer until everything thickens. Top with more squash, soy sauce, scallions, and chili flakes to recreate the recipe that was voted our readers’ favorite use of winter squash.
15. Quiche Lorraine With Hash Brown Crust
Hash. Brown. Crust. I’ll leave it at that.
16. Spanakopita Scones
These super savory scones feature baby spinach, crumbled feta, scallions, and chopped dill. We love the flavor and we love that you can make the dough in advance, which means an easy weeknight dinner is waiting for you in the fridge.
17. The Kitchn’s Lofty Buttermilk Pancakes
Sometimes when I want breakfast for dinner, I really just want breakfast…aka a giant stack of pancakes slathered in maple syrup. Skip the boxed mix and make this easy from-scratch recipe for classic buttermilk pancakes.
18. Lady & Pups’s Magic 15-Second Creamy Scrambled Eggs
For years, I heard that the best way to cook eggs was low and slow for a long, long time. That’s why this recipe—which calls for cooking the creamiest-ever scrambled eggs in just 15 seconds—is so mind-blowing.
19. Mike’s Famous Fried Eggs
Keep this recipe for perfect fried eggs in your back pocket whenever you’re craving breakfast for dinner.
20. Bell-less, Whistle-less, Damn Good French Toast
This simple recipe for French toast will scratch your itch when you want a little something sweet for dinner tonight. The trick for better-than-average French toast is usually really good bread (in this case, we chose a loaf of eggy challah bread).
21. The Egg Shop B.E.C. (Bacon, Egg & Cheese)
Don’t just grab a bodega bacon, egg, & cheese when you’re hungover—this cheesy, protein-packed sandwich makes the most satisfying dinner, too.
22. Avocado Toast
When you need to have a super speedy dinner, follow this recipe for avocado toast—it’s so much more satisfying than most other quick meals that come together in five minutes.
23. Buttermilk Waffles
Is it just me or do waffles taste better on a snow day? Regardless of the time of year, this recipe is one of our ultimate “breakfast for dinner” meals.
24. Cheese Danish
This isn’t exactly the type of recipe you can prep at a moment’s notice. It takes a total of 12 hours to come together (granted, most of this time is allotted for letting the dough rise). But for a weekend project that ends with breakfast for dinner, it doesn’t get better than this.
25. Mango Yogurt & Granola
A fruity yogurt bowl is exactly what the type of meal I gravitate towards on Sunday night after a weekend of eating pizza al fresco, hot dogs on a walk in Central Park, and a few too many glasses of wine.
